Malika Posted February 9, 2013 Banana nut muffin -Ingredients 2-3 Ripe bananas 1/4 Cup Melted Butter or margarine 1 tbsp vanilla 1 Egg 1 tbsp water/milk /buttermilk( maziwa mala) 1 ½ cup of all-purpose flour 1 tsp. baking powder ½ tsp. cinnamon ½ tsp. ground nutmeg1 cup chopped nuts( almonds or any other nuts you like) ¾ cup sugar 1 tsp.salt METHOD In a bowl Mash the ripe banana using a fork ( wooden spoon is fine). In a separate bowl Whisk the egg in a bowl , add sugar , melted butter, flour ,baking powder, cinnamon, nutmeg , salt plus the chopped nuts .... Add the water , milk ,vanilla,. THEN add the mashed banana.Mix well ..Mix all together to get a nice cake -like mixture Rub butter in a cake pan ... pour the mixture in Bake for 20-30 mins at 350 degree. Enjoy with TEA !!!
